I'm LaJune Williams, founder of Midnite Express - where every meal we serve preserves culture, honors tradition, and brings people back to what matters most. For us, food is storytelling, carrying the history, resilience, and love of generations before us. At a recent festival, one customer walked the entire boardwalk searching for Midnite Express because she wanted one thing - our famous chitlins and hog maws. Moments like that remind us that we're not just cooking food; we're keeping traditions alive and serving flavors people never forget. In a world that moves fast, Midnite Express invites people to slow down, reconnect, and experience the comfort of home. Whether we're serving from our trailer or catering large events, our mission is simple: to create moments where people feel seen, connected, and cared for. Because we're not just serving food - we're serving heritage, community, and a lasting experience.
ABOUT Midnite express
Midnite Express originally known as “Food for the Soul” (NYC) was started by a young girl who had a desire to cook delicious home cooked meals and self-deliver to auto shops in the neighborhood. The purpose was not just to cook good food but make it convenient and affordable for hard workers to get good home cooked meals. Thinking about every job I have held; I can honestly say cooking was the one thing I did and never thought of it as a job. I later decided to take cooking to the streets and began to cook for the annual street fairs in Manhattan that were open every summer. This is where I began to make a name for myself, and my food became well known on the streets of NY.

You can ask anyone, and they will tell you my Southern fried chicken, pulled pork cooked for 11 hours over a hot smoked grill, falling off the bone BBQ ribs, Beef BBQ Ribs, Beef Brisket slow cooked for 12-14 hours. Freshly cooked collard greens, candied yams, macaroni and cheese are enough to keep your mouth watering for days.
Due to life events, I stopped cooking for a while, but I never lost my desire nor my touch to cook. Later I relocated to VA with my husband and my children, and we are stronger than ever and here to take Virginia by a FOOD storm. I am on a mission to bring authentic soul food back once again.
Midnite Express is literally meals on wheels and we travel all over. My desire is to bring the taste of some of the best southern cuisine since grandma’s cooking to Virginia, but don’t take my word on it come stop by yourself.
